Chicken and Wild Rice Soup

A friend of mine mentioned cooking some good chicken and rice soup the other night and this was the basic recipe he used, with ground chicken. I thought I’d give it a whirl but I made a few adjustments based on what was in my kitchen, and what I like. I also increased the quantity because I knew it would be the perfect lunch food for a few days.


  • 2 lbs ground chicken
  • 1 cup (uncooked) of wild rice. I actually just used 4 oz one box of rice-a-roni
  • 2 cans of cream up mushroom soup.
  • 2 cups of milk
  • 1 can of carrots (drained)
  • 1 14.5oz can of chicken broth.
  • 1 package of ranch DRESSING mix (not DIP)
  • 1 tsp cumin
  • 1 tsp sage
  • 2 tsp garlic powder
  • 1 tsp onion powder

I just browned the chicken, cooked the rice, and then threw everything in the crockpot on high for two hours. Now, the picture above is actually after it had been cooking longer so it became more like a stew and less like a soup, but that was fine with me. The rest of the family ate the “soup” version hours earlier and just left the crockpot on ‘warm’ when they were done. So it thickened up a bit.

Overall? I loved it. Of course, I’m a soup girl. I love soup. Especially after a run in the cold which was last night! BEST POST-RUN MEAL EVER.

    I tried this and it is soooo good! I left out the sage because it is not a favorite of mine. I also switched out the chicken for ground turkey because my supermarket didn’t have any chicken. Excellent!

    Is there an alternative to cream of mushroom? My husband and kids do not like mushrooms of any kind. (I know!) But they’d LOVE the rest of the ingredients.
